Immune-Boosting Ginger-Berry Smoothie

Tap into the immune-boosting power of blueberries, ginger and dark leafy greens! Drinking this delicious Immune-Boosting Smoothie can give you a mini reset if your eating has been less healthy than you would wish - or it can help to energize you if you feel a little tired or depleted. It is full of fiber, vitamins and antioxidants. It is sure to do your body good!
Enjoy this smoothie for breakfast, after a workout or as a healthy & tasty pick-up.
Ingredients:
2 cup unsweetened nut milk, such as almond or cashew milk (or coconut water for a lighter taste)
2 ripe bananas, peeled and frozen
1 cup frozen berries - I like to mix blueberries and strawberries.
Juice from 1/2 - 1 fresh lime
1 thumb-sized piece of ginger, peeled
2 cups kale or spinach leaves, loosely packed
1/4 teaspoon ground cinnamon
1 medjool date, pitted OR 2 tsp. raw honey (optional - for a sweeter-tasting smoothie)
Combine all ingredients into a blender and blend until smooth. If necessary, add water for thinner consistency.
Makes 2 generous smoothies.
If you want to add hemp seeds, chia seeds, flax seeds or protein powder you certainly can customize this recipe to make it your own. You can always mix it up by trying different fruit or plant-based milks. Oat milk tastes great as well!
